Stir Fry

This may not look like much to some of you out there but believe me....it was DELICIOUS!  Served over rice, this stir fry treat is a big hit in our house.  And, healthy???  Heck yeah!  You have your extra lean chicken breasts and vegetables galore.  And look at that color!  If that doesn't grab you, I don't know what will.  It's so pretty, it practically screams "Take my picture."  Like I said, Grandpa and I are big fans of making this dish for dinner.  The variations are endless because you are not limited to just chicken but you can make it with shrimp or pork and then you have all the different vegetables to choose from.  The trick is not to overcook it; you want the vegetables to keep some of their "crisp" and "crunch" and to season it up really good.  I like to start with stir frying garlic granules in a little oil, add the meat, then some chicken broth (made from boullion cubes) and the vegetables last and for a very short time.  Grandpa is a big fan of water chestnuts so I usually throw in an extra can of those.  Also, if I happen to have any fresh scallions or green peppers, they make the perfect addition.  Make a batch of Minute Rice and you are set to sit down to a real feast!  And, with just the two of us here, there is always enough left over for another meal and it's like chili.....tastes better the second time around!! 

Even after we have relocated to Tennessee, this item will stay on our menu and no.....I will NOT be making it with grits or hush puppies!!
